Nan’s Nuggets: Healthy Eating with Kale Salad Recipe
Salads are a source of raw nutrients, full of enzymes undestroyed by cooking. Eating a raw salad each day is a good practice and kale is one of the healthiest greens. This salad mixture can be kept a week in the refrigerator. Add different fresh seasonal fruits like peaches or strawberries, pears or apples. You may want to add a dried fruit like dried cherries. A good dressing is hard to come by as bottled dressings are loaded in salt and sugar. This dressing does have oil. Just squeezing an orange over a salad and adding just a sprinkle of salt is a good option. In fact this dressing is delicious without the oil. A good find!
Dressing:
¼ c. lemon juice
A squeeze of an orange
2 T. maple syrup
2 T. shallots
4 T. olive oil
Salt and pepper
Use ½ c. of dressing for a bag of kale (about six servings). Is 390 calories for entire salad or 65 calories per serving.
